Abstract

Green Practices in the Food Service Industry at Manipal – A Study This Paper is an exploratory study about the Green Practices adopted in various Food Service Outlets in Manipal. The World Business Council for Sustainable Development has found that businesses that incorporate sustainable practices benefit with increased financial success. Manipal is an University town with 28000 students from 52 countries pursuing undergraduate and post graduate programs in the University. Manipal is located 3km from Udupi (famous for Lord Krishna temple) in Karnataka state in India. To satisfy the catering requirements of this diverse population there are approximately 50 food service outlets in the organized sector, this includes some famous brands like KFC, Pizza Hut, Dominos, Subway, Café Coffee Day, Kamath restaurants, Basil, China Town etc. Manipal group has its own catering company called “Chef on Wheels “which manages all the student dining halls in the campus. This study investigates about the awareness of Green Practices amongst the managers/ owners of these food service outlets and suggest recommendations.
