Abstract

Microbial inulinases has proven to be an excellent candidate for the production of fructose from inulin with highest yield of 95%. Microbial species were isolated from marine sediments, characterized and studied for their inulinase activity. From the total of three microbial isolates, one isolate was identified as an efficient producer of inulinase. In this study, the effect of varying volume of enzyme and incubation period on enzyme activity were monitored independently. It was observed that enzyme activity had decreased and then arrived at almost a constant value for different volumes of enzyme. In the case of varying incubation period, there was a decrease in the enzymatic activity as the time progressed
