Determination of Morphological features of the nuts is a very important task in the Image Processing based Food Engineering Applications. Morphological features of Cashew kernels of different grades help in classification of the samples based on the Industry requirements. This research works aims to measure morphological or geometrical properties using the image processing techniques (i.e. proposed algorithm). The regression modelling based approach was used increase the accuracy of the output. The models are based on the morphological properties of the Cashew Kernels of different grades.
